Pumpkin Spiced Pork Tenderloin Recipe

Ingredients

Tenderloin Ingredients

  • 2 tsp pumpkin pie spice
  • ½ tsp mustard powder
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2 lbs boneless pork loin end roast
  • 2 tbsp coconut oil melted
  • 1 cup swerve brown sugar substitute

Apple and Onion Compote Ingredients

  • 4 tbsp grass-fed butter
  • 1 onion sliced thin
  • 2 apples sliced thin
  • 1 tbsp honey
  • ½ tbsp red pepper flakes
  • 2 tbsp apple cider vinegar
  • 1-2 tsp pumpkin pie spice to taste

Instructions

Tenderloin Directions

  • Preheat oven to 350 degrees.
  • Mix together the pumpkin pie spice, mustard, onion, and garlic powders.
  • Rub on all sides of the pork loin. Let rest for up to 2 hours at room temperature.
  • Sear tenderloin on all sides until golden brown, about three minutes each side. Set aside.
  • Combine Swerve brown sugar and coconut oil and rub onto the pork.
  • Bake in oven until the pork is cooked through, about 35 minutes for medium.

Apple and Onion Compote Directions

  • Melt butter in a saucepan on the stove.
  • Cook onions in butter until slightly translucent.
  • Add apples and continue to cook mixture down.
  • Add honey, apple cider vinegar, red pepper flakes, and pumpkin pie spice.
  • Continue cooking over medium heat for approximately 10 – 15 minutes.
  • Serve atop sliced tenderloin.
