Broccoli Cheddar Mac-n-Cheese

Ingredients

  • 10 oz pasta I used cauliflower penne
  • 2 tbsp butter
  • ¼ cup whole wheat flour
  • ¼ cup onion diced
  • 2 cups milk
  • 1 cup chicken broth
  • 8 oz cheddar cheese
  • 2 cups broccoli chopped
  • 2 tbsp grated Parmesan
  • ¼ cup panko breading
  • salt and pepper to taste

Instructions

  • Preheat oven to 375 degrees F.
  • Cook pasta according to package directions; set aside.
  • Melt butter over medium heat and slowly add flour, whisking as you go.
  • Add onion and cook another two minutes.
  • Add milk and chicken broth and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick.
  • Remove from heat and gradually add cheese until all cheese is melted.
  • Add broccoli and pasta to the cheese mixture.
  • Pour into a prepared baking dish and top with panko (and additional cheese if desired).
  • Bake for 15 – 20 minutes (kick it up to broil for 1 minute at the end if desired).
  • Enjoy!

Notes

Chef Note: You could swap out the broccoli for spinach or another favorite leafy green vegetable (or any vegetable for that matter).
 Chef Note: You could swap out, or even add to, the cheddar with your favorite cheese. This is kind of an old-school version, so I wanted to keep to the traditional flavor, but any cheese will be delish!
