Broccoli Cheddar Mac-n-Cheese

- 10 oz pasta I used cauliflower penne
- 2 tbsp butter
- ¼ cup whole wheat flour
- ¼ cup onion diced
- 2 cups milk
- 1 cup chicken broth
- 8 oz cheddar cheese
- 2 cups broccoli chopped
- 2 tbsp grated Parmesan
- ¼ cup panko breading
- salt and pepper to taste
Preheat oven to 375 degrees F.
Cook pasta according to package directions; set aside.
Melt butter over medium heat and slowly add flour, whisking as you go.
Add onion and cook another two minutes.
Add milk and chicken broth and continue whisking, raising heat to medium-high until it comes to a boil and becomes smooth and thick.
Remove from heat and gradually add cheese until all cheese is melted.
Add broccoli and pasta to the cheese mixture.
Pour into a prepared baking dish and top with panko (and additional cheese if desired).
Bake for 15 – 20 minutes (kick it up to broil for 1 minute at the end if desired).

Chef Note: You could swap out the broccoli for spinach or another favorite leafy green vegetable (or any vegetable for that matter).
Chef Note: You could swap out, or even add to, the cheddar with your favorite cheese. This is kind of an old-school version, so I wanted to keep to the traditional flavor, but any cheese will be delish!
