Omelet in a Jar

Ingredients

  • 2 eggs beaten
  • ¼ cup shredded cheese
  • ¼ cup chopped tomatoes
  • ¼ cup chopped bacon cooked
  • ½ cup spinach

Instructions

  • Layer each ingredient into the jar, leaving the eggs for last.
  • Place lid onto the jar and store in the refrigerator for up to 24 hours.
  • When ready to eat, simply shake the jar until all ingredients are incorporated.
  • Pop the jar (sans lid) in your microwave for two minutes.
  • Remove (carefully, so you don’t burn yourself), and dig in!

Notes

Chef Note: You can use whatever ingredients you have on hand (e.g., broccoli, peppers, mushrooms, etc.) and, of course, substitute for a cheese of your liking (e.g., cheddar, ricotta, mozzarella, etc.), a meat of your liking (e.g., turkey bacon, ham, breakfast sausage, etc.), or forego meat and cheese altogether.
