Healthy Honey Lime Vinaigrette

Ingredients

  • 2 cups fresh cilantro chopped
  • 1 garlic clove minced
  • ¼ cup lime juice
  • 2 tsp honey
  • ½ tsp ground coriander
  • ½ tsp salt
  • ½ cup extra virgin olive oil

Instructions

  • Add all ingredients to a jar. Shake until well incorporated.
  • Drizzle over your salad and enjoy!

Notes

Chef Note: This dressing can also be used as a delicious marinade. If you prefer to make this a creamier version as opposed to a vinaigrette, you could also add some Greek yogurt or perhaps an avocado.
 Chef Note: If you prefer a sweeter taste to cut some of the bitterness, you could swap out the honey with maple syrup.
 Chef Note: I prefer to coat the salad in the dressing and allow to soften the kale and cabbage a bit before eating. That is completely to your preference, but for me, raw kale and cabbage can be a bit tough.
