Sausage, Kale, and Sweet Potato Soup

Ingredients

  • 1 lb sausage turkey or chicken
  • 1 yellow onion chopped
  • 4 garlic cloves grated
  • 2 large sweet potatoes peeled and cubed
  • 4 cups chicken stock
  • 1 bay leaf
  • 1 bunch kale stems removed and chopped
  • 1 cup cannelini beans
  • salt and pepper to taste

Instructions

  • Cook sausage over medium heat, breaking it up into crumbles as it cooks.
  • Add onion and cook until it turns translucent.
  • Add garlic and continue cooking.
  • Add sweet potatoes, chicken stock, and bay leaf.
  • Cook partially covered over medium heat until the sweet potatoes are tender.
  • Remove the bay leaf and add the kale and cannellini beans.
  • Continue to cook over medium heat until the kale is tender.
  • Season with salt and pepper to taste.
