Sausage, Kale, and Sweet Potato Soup

- 1 lb sausage turkey or chicken
- 1 yellow onion chopped
- 4 garlic cloves grated
- 2 large sweet potatoes peeled and cubed
- 4 cups chicken stock
- 1 bay leaf
- 1 bunch kale stems removed and chopped
- 1 cup cannelini beans
- salt and pepper to taste
Cook sausage over medium heat, breaking it up into crumbles as it cooks.
Add onion and cook until it turns translucent.
Add garlic and continue cooking.
Add sweet potatoes, chicken stock, and bay leaf.
Cook partially covered over medium heat until the sweet potatoes are tender.
Remove the bay leaf and add the kale and cannellini beans.
Continue to cook over medium heat until the kale is tender.
Season with salt and pepper to taste.
