Funfetti Protein Bars

Ingredients

  • ½ cup Vanilla Cupcake Low Carb Lite Protein Blend
  • ½ cup maple syrup
  • 1 cup almond flour
  • 2 cups oat flour
  • 4 tbsp almond milk
  • 1 tbsp vanilla extract
  • ¼ cup nut butter I used almond
  • 2 tbsp Swerve sugar substitute optional
  • sprinkles

Instructions

  • Mix flours, protein, and sweetener in a bowl; set aside.
  • Mix nut butter and syrup and heat in microwave roughly 30 seconds; set aside.
  • Combine wet and dry mixtures.
  • Add vanilla and milk and continue stirring until a batter forms.
  • Transfer dough to baking dish and press down firmly to create an even layer.
  • Press sprinkles into the top and refrigerate for 30 minutes or until firm.
  • Cut into equal pieces and store in the fridge for up to one week.
  • Enjoy!

Notes

Chef Note: If the consistency isn’t reached to allow a dough to form, you can add your milk or preference until desired consistency is reached.
