Mediterranean Tuna Salad Recipe

This grown-up canned tuna recipe is cheap and perfect for the family.

Ingredients

Dijon Mustard Dressing

  • 2.5 tsp Dijon mustard
  • 1 lime zest
  • 2 limes juiced
  • cup extra virgin olive oil
  • ½ tsp crushed red pepper
  • salt and pepper to taste

Tuna Salad

  • 3 cans tuna drained
  • 2 celery stalks chopped
  • 1 cucumber deseeded and chopped
  • 3 green onions chopped
  • ½ red onion chopped
  • ½ cup Kalamata olives halved

Instructions

  • Combine all the tuna salad ingredients.
  • Toss with dressing.
  • Spoon onto a plate of lettuce, spinach, or your choice of leafy greens.
  • Enjoy!

Notes

Chef Note: I am really not a huge fan of raw onion as I find it overpowers the entire dish, so I used pickled red onion in this recipe. If you have a Costco membership, I implore you to check out their pickled red onions. They are usually out whenever I go, so when I am lucky enough to find them, I stock up. They are great not only in this dish but in so many other things—on sandwiches, tacos, etc.
 Chef Note: You could also add the leaves from the celery and/or parsley or mint to the tuna salad. I really like using the entire stalk of celery and adding parsley. If I were making a different type of tuna salad, I may add mint and perhaps some feta. It goes great with the cucumber and the dressing.
