Cottage Cheese Bread

Delicious + Protein - Flour = Cottage Cheese Bread

Ingredients

  • 2 cups cottage cheese
  • cups oats
  • 4 eggs
  • 2 tbsp olive oil
  • 1 tbsp baking powder
  • ¼ tsp salt

Instructions

  • Preheat oven to 350 degrees F.
  • Line a bread pan with parchment paper. (I used a 9 X 5 loaf pan.)
  • Add all ingredients to a blender or food processor and pulse until mostly smooth.
  • Bake the batter for roughly 35 – 40 minutes until a toothpick or knife comes out clean.
  • Allow to set before slicing.
  • Enjoy!

Notes

Chef Note: You can use whatever kind of oatmeal you prefer—I kinda like steel cut for its hearty texture, but it’s up to you. If you want to go fully gluten-free, remember to read the label to ensure your oats have not been contaminated and aren’t processed in a facility that also processes wheat.
