Ingredients

  • 1 cup low-fat cottage cheese drained for a thicker texture
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or your choice of seasonings

Instructions

  • Preheat the oven to 400 degrees F. Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
  • Combine the cottage cheese, parmesan, garlic powder, and seasoning. Mix or blend until smooth.
  • Using a scoop (like a small ice cream scoop), drop small mounds on your prepared baking sheet, leaving a couple of inches between each mound. (They spread out as they bake.) Use the back of a spoon to flatten slightly.
  • Bake for 15 to 20 minutes (checking occasionally to ensure they don’t burn) or until the edges are golden brown and the center is firm.
  • For even crunchier crackers, turn off the oven and place the cut crackers back inside for another 10 to 15 minutes while the oven cools down.
  • Remove them from the oven and transfer them to a wire rack, and let them cool completely.
