- 1 cup low-fat cottage cheese drained for a thicker texture
- 1/2 cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning or your choice of seasonings
Preheat the oven to 400 degrees F. Prepare your baking sheet by lining it with parchment paper or a silicone baking mat.
Combine the cottage cheese, parmesan, garlic powder, and seasoning. Mix or blend until smooth.
Using a scoop (like a small ice cream scoop), drop small mounds on your prepared baking sheet, leaving a couple of inches between each mound. (They spread out as they bake.) Use the back of a spoon to flatten slightly.
Bake for 15 to 20 minutes (checking occasionally to ensure they don’t burn) or until the edges are golden brown and the center is firm.
For even crunchier crackers, turn off the oven and place the cut crackers back inside for another 10 to 15 minutes while the oven cools down.
Remove them from the oven and transfer them to a wire rack, and let them cool completely.
