Ingredients

  • 2 1/2 cups rolled oats with ancient grains & seeds Trader Joe’s
  • 4 scoops Low Carb Lite™ Whey Protein unflavored
  • 1/4 cup unsweetened coconut shredded
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • Pinch of salt
  • 1/3 cup mini semi-sweet chocolate chips
  • 1/2 cup of creamy peanut butter or nut butter of your choice
  • 1/2 cup pumpkin puree
  • 3 Tbsp pure maple syrup
  • 1 Tbsp oil such as coconut or olive
  • 1 tsp vanilla extract

Instructions

  • In a bowl, mix all dry ingredients until combined.
  • Add in the nut butter, pumpkin puree, maple syrup, oil, and vanilla extract. Then, stir well to combine all ingredients.
  • With clean hands, roll the mixture into 25 to 30 one-inch balls.
  • Store in the refrigerator for easy grab-and-go snacks!
