- 2 1/2 cups rolled oats with ancient grains & seeds Trader Joe’s
- 4 scoops Low Carb Lite™ Whey Protein unflavored
- 1/4 cup unsweetened coconut shredded
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- Pinch of salt
- 1/3 cup mini semi-sweet chocolate chips
- 1/2 cup of creamy peanut butter or nut butter of your choice
- 1/2 cup pumpkin puree
- 3 Tbsp pure maple syrup
- 1 Tbsp oil such as coconut or olive
- 1 tsp vanilla extract
In a bowl, mix all dry ingredients until combined.
Add in the nut butter, pumpkin puree, maple syrup, oil, and vanilla extract. Then, stir well to combine all ingredients.
With clean hands, roll the mixture into 25 to 30 one-inch balls.
Store in the refrigerator for easy grab-and-go snacks!
