- 15 dates pitted
- 1 cup shredded unsweetened coconut
- 1 tsp vanilla extract
- 2 Tbsp dark chocolate chips
- 1/4 Tbsp coconut oil
- Dash of salt
Prepare your storage container by lining the bottom with parchment paper. Set aside.
Place dates, coconut, and vanilla in a food processor or blender. Process until well combined in a sticky mixture.
Roll into 15 balls.
In a small saucepan, heat the coconut oil. Then add chocolate chips and a dash of salt and melt the chocolate over low heat. Dip each ball in the melted chocolate or drizzle the chocolate over the top (whatever is easier for you).
Allow to cool in the fridge, and enjoy!
