Pumpkin Spice Baked Oatmeal

Ingredients

  • 1 Tbsp olive oil
  • 1 Tbsp brown sugar (or brown sugar alternative)
  • dash of salt
  • 1/4 cup pecan bits
  • 2 cups rolled oats
  • 1/4 cup brown sugar or brown sugar alternative, unpacked
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp baking soda
  • Dash of salt
  • 1 1/2 cups milk or your preferred milk alternative
  • 1 cup pumpkin puree
  • 1 mashed banana
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  • Melt oil over medium heat and mix in brown sugar and a dash of salt. Stir in pecans until they’re well coated. Then, set aside.
  • Preheat oven to 350° F (175° C). And grease an 8” x 8” baking dish.
  • In a mixing bowl, combine all dry ingredients until well mixed.
  • In another bowl, combine the milk, pumpkin puree, banana, eggs, and vanilla and mix well.
  • Stir wet ingredients into the dry ingredients until well combined.
  • Pour the mixture into the prepared dish. Top with sugared pecans. And bake for 30 – 35 minutes, until set and golden.
  • And serve warm immediately. Or cool completely before slicing into individual servings to store in the fridge for up to 4 days.

Notes

Instead of the cinnamon, ginger, and nutmeg, you can also use a pumpkin spice blend.
