Pumpkin Spice Baked Oatmeal

- 1 Tbsp olive oil
- 1 Tbsp brown sugar (or brown sugar alternative)
- dash of salt
- 1/4 cup pecan bits
- 2 cups rolled oats
- 1/4 cup brown sugar or brown sugar alternative, unpacked
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp baking soda
- Dash of salt
- 1 1/2 cups milk or your preferred milk alternative
- 1 cup pumpkin puree
- 1 mashed banana
- 2 eggs
- 1 tsp vanilla extract
Melt oil over medium heat and mix in brown sugar and a dash of salt. Stir in pecans until they’re well coated. Then, set aside.
Preheat oven to 350° F (175° C). And grease an 8” x 8” baking dish.
In a mixing bowl, combine all dry ingredients until well mixed.
In another bowl, combine the milk, pumpkin puree, banana, eggs, and vanilla and mix well.
Stir wet ingredients into the dry ingredients until well combined.
Pour the mixture into the prepared dish. Top with sugared pecans. And bake for 30 – 35 minutes, until set and golden.
And serve warm immediately. Or cool completely before slicing into individual servings to store in the fridge for up to 4 days.
Instead of the cinnamon, ginger, and nutmeg, you can also use a pumpkin spice blend.
