Ingredients

  • 1 cup cottage cheese
  • 1/2 cup pure pumpkin puree
  • 2 scoops Low Carb Multi Protein Salted Caramel
  • 1/2 Tbsp maple syrup
  • 1/2 to 1 tsp pumpkin pie spice
  • Optional toppings: pumpkin seeds granola, a sprinkle of cinnamon, or some whipped cream

Instructions

  • Blend cottage cheese, pumpkin puree, and protein powder until smooth and fluffy. (I used an immersion blender. A food processor or mixer would also work well. A high-speed blender, on the other hand, isn’t recommended.)
  • Stir in maple syrup and pumpkin pie spice.
  • Serve topped with your choice of crunchy toppings or extra whip.
  • Enjoy!

Notes

You can also use sugar-free maple syrup, honey, or your preferred choice of sweetener.
