Fajita Steak Foil Packet Recipes

Whether you are looking for an easy-peasy week night meal that won’t leave you drawing straws for who has to do dishes, or you are planning a few good meals for a camping trip, I’ve got you covered with these foil packet recipes.

Grab a piece of aluminum foil and load it up with your favorite protein and veggies and toss it on the grill. It’s THAT simple. You can add your favorite herbs and spices or marinade, and everything cooks together, so there is no waiting for each ingredient to finish cooking to ring the dinner bell.

Each of these foil packet recipes are per serving; however, when cooking for a crowd, just make one packet per person. You can even double up the recipe per packet, but I would not recommend putting more than two portions per foil packet or you may sacrifice everything cooking evenly.

I like the flavor of butter with these, but you could easily substitute EVOO or even coconut oil instead. Be mindful when opening the foil packets as they will have steam inside that is extremely hot. (I learned this the hard way. Ouch!)

And remember, the sky is your only limit when creating a foil packet meal!

Chicken Foil Packet Recipes

Easy Peasy Chicken Foil Packet Recipe

Ingredients:

  • 1 boneless chicken breast
  • 1 large bundle of asparagus spears
  • 1 lemon, sliced
  • 1 tsp garlic
  • 3 Tbsp butter
  • 1 – 2 sprigs rosemary
  • Salt and pepper, to taste

Directions:

  1. Lay a piece of aluminum foil on the table.
  2. Place butter in the middle of foil.
  3. Lay asparagus on top of the butter.
  4. Lay chicken breast on top of the asparagus.
  5. Place sliced lemon, garlic, and rosemary on top of the chicken.
  6. Sprinkle with salt and pepper to taste.
  7. Fold the foil over the chicken and asparagus to close off the pack, then pinch the ends together so the pack stays closed.
  8. Grill over medium-high heat for 12 – 15 minutes on each side OR bake in the oven at 400 for 30 – 35 minutes or until chicken is cooked through and asparagus is tender.
  9. Voila!

Chef Note: I prefer to slice the chicken breast in half so it cooks evenly. You can use your best judgement depending on the size of your chicken breast.

Chef Note: Chicken thighs also work well in this recipe; however, you will reduce the cooking time since they are generally smaller in size. You’ll also want to use a little less butter.

Steak Fajita Foil Packet Recipe

Ingredients:

  • 3 – 4 oz steak, sliced
  • 2 cups bell peppers, sliced
  • ½ can black beans
  • 1/2 cup sliced onion
  • 1 bunch cilantro
  • 3 Tbsp butter
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Directions:

  1. Lay a piece of aluminum foil on the table.
  2. Place butter in the middle of foil.
  3. Lay sliced steak on the top of the butter.
  4. Add black beans and sliced onions.
  5. Top everything with spices, and salt and pepper, to taste.
  6. Close the foil packet.
  7. Bake the foil packet for 40 minutes or grill for 35 minutes.
  8. Carefully open packet and place contents on plate.
  9. Sprinkle with cilantro and add fajita toppings such as lettuce, salsa, and avocado.

Salmon Foil Packet Recipes

Mediterranean Salmon Foil Packet Recipe

Ingredients:

  • 1 salmon filet
  • ½ cup cherry tomatoes
  • ½ cup black olives, pitted
  • ½ can artichoke hearts
  • 1 Tbsp capers
  • 3 Tbsp butter
  • 1 Tbsp garlic
  • 2 tsp thyme
  • Salt and pepper, to taste

Directions:

  1. Lay a piece of aluminum foil on the table.
  2. Place butter in the middle of foil.
  3. Lay salmon on top of butter.
  4. Top salmon with thyme and garlic.
  5. Arrange artichokes, tomatoes, olives, and capers around salmon.
  6. Close up the foil packet
  7. Bake in 400-degree oven until hot and steaming, about 25 – 30 minutes, or on the grill for roughly 10 minutes per side.

Chef Note: You could use any fish you prefer or even do a surf and turf medley. I was going with a Mediterranean vibe here, so salmon seemed to work with my other ingredients for this foil packet recipe.
