Super Simple Summer Chicken Salad Recipe
Looking for ways to spruce up your leafy greens without adding a ton of unnecessary calories? I’ve got ya covered. You can change the entire flavor profile of your meal with some added textures, mixed berries, lean protein, and a refreshing dressing.
My go-to lean protein is usually grilled chicken. Since it has such a mild flavor, it can really take on whatever you pair it with and can soak up flavors like a sponge. While you could add fish or shrimp or another light seafood, you could also add sliced grass-fed steak if you so desire. In keeping things simple, I went with a grilled chicken for this particular recipe.
Since strawberry season is upon us, it seemed only natural to top this recipe with fresh fruit, so I included strawberries, blueberries, and for a change of pace, some fresh pineapple. Since I always dress my leafy greens with the fresh squeezed juice of a lemon, that was a given. And since it always needs a crunch factor (in my opinion), that came in at the end in the form of walnuts for some healthy omegas.
Ingredients
- 2 cups spring salad mix
- 1 chicken breast grilled and sliced
- ½ cup strawberries sliced
- ½ cup blueberries
- ½ cup pineapple slices
- 2 tbsp walnuts chopped
Poppyseed Dressing
- ½ cup extra virgin olive oil
- 4 tbsp Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tbsp poppyseeds
- salt and pepper to taste
