Ingredients:

Directions:

  1. Heat the coconut oil and protein powder in a saucepan on medium heat until it has a smooth, white consistency.
  2. Pour equal amounts into silicone molds to make ten fat bombs.
  3. Put the fat bombs in the freezer, and allow to set for at least 2 hours.
  4. These can be stored in a Ziploc® bag in the freezer for up to 2 months.

Chef Tip: Sprinkle the fat bombs with a little sea salt to amp up the flavor!
Chef Tip: If you don’t have a silicon mold, an ice cube tray will work great.

Ingredients:

  • 2 Tbsp cocoa powder
  • 1 – 2 Tbsp erythritol
  • 1 medium egg
  • 1 Tbsp heavy cream
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • 1 pinch salt

Directions:

  1. Preheat oven to 350°F.
  2. Combine erythritol and cocoa powder, and whisk to remove any clumps.
  3. In a separate bowl, beat egg until fluffy.
  4. Add egg, heavy cream, vanilla extract, salt, and baking powder to the erythritol and cocoa mixture.
  5. Spray cooking oil into mug, and pour your batter in and bake for about 10 – 15 minutes.

Chef tip: Do not overcook the cake, or the lava will not flow!

Bacon Wrapped Jalapeño Poppers

Ingredients:

  • 16 fresh jalapeños
  • 16 strips bacon
  • 4 oz cream cheese
  • 1/4 cup shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp paprika

Directions:

  1. Preheat oven to 350° F.
  2. Slice the ends off each jalapeno, then slice each jalapeno in half length-wise.
  3. Remove seeds and membranes with a corer or knife. *Caution: use gloves to protect hands, and keep your hands far away from your face!
  4. Mix the cream cheese and cheddar cheese together in a bowl.
  5. Fill each jalapeño half with the cheese mixture.
  6. Wrap each jalapeño piece in each half of bacon.
  7. Place all bacon-wrapped jalapeño poppers on a baking sheet lined with aluminum foil.
  8. Bake for 20 – 25 minutes.

Chef tip: The longer you bake the poppers, the less spicy hot they become.

Ingredients:

  • 1 avocado
  • 2.5 Tbsp raw cocoa powder
  • 1/16 tsp ground cayenne pepper
  • 1 tsp Ceylon cinnamon
  • 1 Tbsp unsweetened coconut milk
  • 1 Tbsp erythritol
  • 1/2 tsp vanilla extract
  • 1 pinch Stevia
  • 1 pinch pink Himalayan sea salt (optional)

Directions:

  1. Cut and pit an avocado and blend the avocado flesh in a food processor until smooth.
  2. Add cocoa powder, coconut milk, and vanilla extract, and blend until smooth.
  3. Add in erythritol (or your favorite sweetener), cinnamon, a pinch of stevia, and ground cayenne pepper.
  4. Keep blending until smooth.

Chef tip: This is great served with a sprinkle of Himalayan sea salt on top!
