Of all the things folks adhering to the ketogenic diet mention missing out on, ice cream tops the list. But it doesn’t have to. By whipping up a super simple base, you can add different flavors using natural oils and even include add-ins, such as cacao chips and peanut butter, to really take things to the next level.

Who is screaming for keto ice cream now?

The first recipe is for those of you who have an ice cream maker. Bear with me, because you don’t have to have one to enjoy the best-tasting keto ice cream recipes, but if you do, here ya go.

Keto Ice Cream Recipe (Churner Required)

Ingredients:

  • 2 cups heavy whipping cream
  • ½ cup powdered erythritol
  • 1 pasteurized egg yolk
  • 1 Tbsp vanilla extract

Directions:

  1. Blend all ingredients together for a few seconds in a blender (or NutriBullet®).
  2. Pour blended mixture into your ice cream maker.
  3. The rest is up to the machine. Let it do its thing.
  4. Enjoy!

Chef Note: If you want to really bring out the natural vanilla flavor in this keto ice cream recipe, you can use fresh vanilla bean.

No-Churn Keto Ice Cream Recipe

Ingredients:

Directions:

  1. Combine all ingredients into a mixing bowl and whisk until well incorporated.
  2. Evenly pour into 4 mason jars, and close the lid tightly.
  3. Give each jar another shake or two.
  4. Place jars in the freezer and allow to freeze until solid, about 4 – 6 hours.
  5. Enjoy this delicious keto ice cream recipe!

Chef Note: I like to check in on things every two hours and give the jars a little shimmy-shake just to make sure the heavy cream doesn’t settle to the bottom.

As an added bonus, I am going to show you a secret way to make EASY vanilla extract at home.

Instant Pot Vanilla Extract

Ingredients:

  • 10 vanilla beans
  • 4 cups vodka (of your choice)
  • 2 mason jars

Directions:

  1. Split each vanilla bean down the center long-ways.
  2. Divide vanilla beans equally and add to each mason jar.
  3. Add two cups of vodka to each mason jar.
  4. Screw lids onto mason jars and place on trivet in Instant Pot.
  5. Add one cup of water to bottom of Instant Pot.
  6. Pressure cook on high for 60 minutes.
  7. Let Instant Pot release pressure for another 60 minutes.
  8. Remove mason jars from Instant Pot and allow to cool.
  9. Add to any recipe that calls for vanilla extract!

Chef Note: The longer you allow the mixture to sit (over 24 hours), the better the flavor.
