Top Healthy Chicken Salad Recipe (Delicious & Protein-Packed)
Take the help where you can get it—that’s what I always say. Nobody wants to spend hours in the kitchen, especially during the summer months when you would rather be outdoors relaxing with a cool drink in your hand. That’s why I had to share my super-easy and healthy chicken salad recipe.
Local grocers have made it super simple to help us get meals prepared with pre-washed bagged lettuce, which can be a huge time saver—especially when you are using kale or collards which require the stems and veins to be trimmed and discarded. Some have the vegetable trinity (onions, celery, and carrots) washed, pre-cut, and ready for you to use as a base for a stew, soup, or main course.
My personal favorite thing to grab on my way home is a rotisserie chicken. The sky is the limit when it comes to what you can make when you have an entire chicken already cooked to perfection, but without having to lift a finger. Using a rotisserie chicken as your base automatically provides a solid protein for your dish, so all that’s left is adding some veggies, a few herbs and spices, and you have a semi-homemade healthy chicken salad recipe your friends and family will think you spent all day slaving over.
I came up with this healthy chicken salad recipe and thought it was perfect for the summer months, because it can withstand being taken on a picnic or outdoors without fear of spoiling quickly (because it doesn’t contain mayo, for example).
Healthy Chicken Salad Recipe
- 1 rotisserie chicken
- 2 ears corn, grilled
- 1 avocado
- 1 lemon
- 2 Tbsp extra virgin olive oil (EVOO)
- 2 Tbsp chives/green onions
- Salt and pepper, to taste
- Remove meat from chicken and shred lightly.
- Grill two ears of corn and slice from cob.
- Dice one avocado.
- Zest one lemon and squeeze juice from lemon.
- Dice chives/green onions.
- Combine all ingredients and toss lightly.
- Store in refrigerator until ready to serve.
