Healthy Mexican Pizza Recipe (Taco Bell Copycat)
The infamous fast-food chain Mexican pizza is back, but not for long. In fact, it was back, but due to high demand, it had already run out in most cities. I have heard folks on both sides of the fence—some are glad it’s back, while others claim it is not the same as the pizza they remember, leaving them extremely disappointed. Regardless of where you weigh in on this debate, I can honestly say I never knew this was such a popular menu item until it was discontinued.
With the original Mexican pizza having 530 calories, 19 g of protein, 49 g of carbs, and 29 g of fat, it isn’t the most unhealthy thing on a fast-food menu… But could it be healthier? Of course! And let’s be honest, are we really sure what all goes into making these fast-food creations? I think the jury is still out on that one.
The beauty of the homemade Mexican pizza recipe is that you can load it with so many healthful toppings and slice it into smaller triangle wedges to share as an appetizer, or you can consume it all yourself as your main course as it provides a balance of protein, carbs, and fats. What’s more, you can basically build a salad on top of the tortillas if you so desire to really up the nutrient content.
I personally think the taco sauce is what steals the show. I have often made this with salsa, but recently, I created a homemade taco sauce that is amazing. I am almost embarrassed to say that one time I ran out of the ingredients to make my homemade taco sauce and improvised by doctoring up a can of “Sloppy Joe” mix. Honestly, it was not too bad, and nobody even noticed, but… y’all know I can do better than that with my healthy Mexican pizza recipe.
That being said, my taco sauce recipe is as follows:
- 1 (16-ounce) can tomato sauce
- ⅔ cup water
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp cayenne pepper
- *Optional pinch of Swerve sugar substitute
And while I am all for taking the help where you can get it (aka semi-homemade) and grabbing a packet of taco seasoning off the shelf, I also happen to have a recipe for homemade taco seasoning if you are so inclined.
- 1 Tbsp chili powder
- ½ Tbsp cumin
- 1 tsp black pepper
- ½ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp red pepper flakes
- ½ tsp oregano
- ½ tsp cayenne pepper
- Pinch of salt (optional)
Now for the good stuff…the healthy Mexican Pizza recipe!
Ingredients
- ½ lb ground turkey
- 2 tbsp taco seasoning
- 8 corn tortillas
- ½ cup refried beans
- ½ cup cheddar cheese shredded
- ½ cup taco sauce
- 1 tomato diced
- green onions diced
Instructions
- Preheat the oven to 350 degrees F.
- Brown turkey meat, drain, add taco seasoning, and set aside.
- Lightly brown tortillas in oven (optional).
- Lay 4 tortillas on a baking tray.
- Evenly spread refried beans on each tortilla.
- Layer turkey on top of beans.
- Add second tortilla on top.
- Add a layer of taco sauce on top of second tortilla.
- Sprinkle cheese on top.
- Bake for 8 – 10 minutes until cheese is nice and melted.
- Garnish with tomatoes and green onions.
