Ingredients

  • 15 dates pitted
  • 1 cup shredded unsweetened coconut
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate chips
  • 1/4 Tbsp coconut oil
  • Dash of salt

Instructions

  • Prepare your storage container by lining the bottom with parchment paper. Set aside.
  • Place dates, coconut, and vanilla in a food processor or blender. Process until well combined in a sticky mixture.
  • Roll into 15 balls.
  • In a small saucepan, heat the coconut oil. Then add chocolate chips and a dash of salt and melt the chocolate over low heat. Dip each ball in the melted chocolate or drizzle the chocolate over the top (whatever is easier for you).
  • Allow to cool in the fridge, and enjoy!
