Low-Carb Dessert Recipe #1: Vanilla Cheesecake

Ingredients:

  • 2 large eggs
  • 12 oz cream cheese
  • 5.3 oz vanilla Greek yogurt
  • 1 ½ tsp vanilla extract
  • 4 scoops Vanilla Cream BioTrust® Low Carb
  • ¼ tsp Himalayan sea salt
  • ¾ cup granular stevia

Directions:

  1. Preheat oven to 325 degrees.
  2. Mix the first 4 ingredients with an electric mixer.
  3. Add the remaining ingredients and continue to blend together.
  4. When the mixture is smooth (containing no lumps), line a 6×2 cake pan with parchment paper.
  5. Pour your cheesecake batter into a lined cake pan.
  6. Bake at 325 for 30 minutes, lower the temperature to 200, and continue to bake for 60 minutes.
  7. Refrigerate overnight.

Cake Ingredients:

  • 3 scoops Vanilla Cream BioTrust® Low Carb
  • 1/3 cup oat flour
  • 1 ¼ tsp cinnamon
  • 1 tsp baking powder
  • ¾ cup plain Greek yogurt
  • 1/3 cup unsweetened applesauce
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla extract
  • 1 tsp butter extract

Topping Ingredients:

  • ¼ cup oats
  • 3 tsp coconut sugar
  • 1 tsp cinnamon
  • 2 Tbsps coconut oil

Directions:

  1. Mix all dry cake ingredients in one bowl, and mix the wet ingredients in a separate bowl.
  2. After they’re mixed separately, combine dry and wet ingredients together.
  3. Pour batter into a greased 8×8 pan.
  4. Mix together topping ingredients and sprinkle onto cake.
  5. Bake at 350 degrees for 20 to 25 minutes, until a toothpick comes out clean.

Low-Carb Red Velvet Lava Cake

Low-Carb Dessert Recipe #3: Red Velvet Lava Cakes

Ingredients:

  • 2 scoops Milk Chocolate BioTrust® Low Carb
  • 2 tsp dark cocoa powder
  • 1 tsp vanilla extract
  • Pinch of Himalayan sea salt
  • 2 Tbsps dark chocolate chips
  • 7 Tbsps unsweetened almond milk
  • 1 Tbsp coconut flour
  • 1 large egg
  • 1 tsp baking powder

Directions:

  1. Preheat oven to 350 degrees.
  2. In a microwave-safe bowl, heat almond milk, dark chocolate chips, and vanilla extract in 30-second intervals, stirring between intervals, until smooth.
  3. Add Low Carb protein blend, dark cocoa powder, sea salt, stevia, coconut flour, and baking powder.
  4. Add in the egg and mix thoroughly.
  5. Grease 2 ramekins with non-stick spray and divide mixture between both ramekins.
  6. Bake at 350 for 12 minutes and let cool for 5 minutes.
  7. Flip ramekin over onto a plate, and allow cake to fall out.

Ingredients:

  • 2 scoops Vanilla Cream BioTrust® Low Carb
  • 4 oz fat-free cream cheese
  • ½ cup plain Greek yogurt
  • ¼ tsp vanilla extract
  • ¼ tsp butter extract
  • *optional 1 – 2 tsp sprinkles

Directions:

  1. Place all ingredients (except sprinkles) into a bowl.
  2. Blend 1 minute until smooth.
  3. Fold in sprinkles.
  4. Place batter into a bowl and store in the refrigerator.
