Behold… this incredible creation ofthe best darn protein bars I’ve ever created. Packed with antioxidant-rich blueberries and heart-healthy omega-3-filled walnuts, these blueberry walnut energy bars make for an ideal protein-rich breakfast recipe that’s bound to become a family staple.

Fun Fact #1: Blueberries are not only a good source of fiber (3.5 grams per cup), but they’re also packed with vitamin C, vitamin K, and manganese. Plus, they’re low-calorie. Most impressive, though, are their polyphenols—colorful antioxidants that lend blueberries their deep, rich hue. These antioxidants help fight oxidative stress, support a healthy inflammatory response, and offer additional benefits for heart health, metabolic function, and even muscle recovery. They may even help with weight regulation.

Fact #2: Walnuts are rich in antioxidants, folate, and vitamin E, surpassing all other nuts. Ingredients

  • 12 eggs
  • 2 scoops BioTrust Low Carb Protein *Vanilla Cream or your favorite flavor
  • 1 cup rolled oats
  • 1 cup walnuts chopped
  • 1 cup blueberries
  • 1 Tbsp orange zest

Instructions

  • Preheat oven to 350 degrees F.
  • Whisk the eggs together, and then add the protein powder and oats.
  • Fold in the walnuts, blueberries, and orange zest.
  • Pour mixture into a prepared 13X9 baking dish, or alternatively, muffin tins, and bake for 30 – 35 minutes.
  • Allow to cool before cutting into squares.

Notes

Notes: These will stay fresh for up to one week. However, it is very important to make sure they are cooled before storing; if there is ANY moisture whatsoever, they will not last past a few days. (I learned this the hard way.)
