Pumpkin (and pumpkin spice) becomes the star of everything from lattes to soups, pies to savory sides, snacks to desserts, and more. Indeed, this versatile fall fruit embodies the season’s cozy and festive spirit.
What makes pumpkin so popular? Not only does it have an earthy, slightly sweet flavor that pairs well with spices, but its smooth texture makes it ideal for both sweet and savory dishes.
Pumpkins originated in North America, where Indigenous peoples used them for food, medicine, and even as containers. The orange gourd later became an autumn staple for early settlers. Today, pumpkin isn’t just a festive icon. It’s a healthy addition to almost any diet as it’s packed with vitamins A and C, fiber, and antioxidants. - 1 cup cottage cheese
- 1/2 cup pure pumpkin puree
- 2 scoops Low Carb Multi Protein Salted Caramel
- 1/2 Tbsp maple syrup
- 1/2 to 1 tsp pumpkin pie spice
- Optional toppings: pumpkin seeds granola, a sprinkle of cinnamon, or some whipped cream
Instructions
- Blend cottage cheese, pumpkin puree, and protein powder until smooth and fluffy. (I used an immersion blender. A food processor or mixer would also work well. A high-speed blender, on the other hand, isn’t recommended.)
- Stir in maple syrup and pumpkin pie spice.
- Serve topped with your choice of crunchy toppings or extra whip.

- 2 1/2 cups rolled oats with ancient grains & seeds Trader Joe’s
- 4 scoops Low Carb Lite™ Whey Protein unflavored
- 1/4 cup unsweetened coconut shredded
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- Pinch of salt
- 1/3 cup mini semi-sweet chocolate chips
- 1/2 cup of creamy peanut butter or nut butter of your choice
- 1/2 cup pumpkin puree
- 3 Tbsp pure maple syrup
- 1 Tbsp oil such as coconut or olive
- 1 tsp vanilla extract
Instructions
- In a bowl, mix all dry ingredients until combined.
- Add in the nut butter, pumpkin puree, maple syrup, oil, and vanilla extract. Then, stir well to combine all ingredients.
- With clean hands, roll the mixture into 25 to 30 one-inch balls.
- Store in the refrigerator for easy grab-and-go snacks!

- 1 Tbsp olive oil
- 1 Tbsp brown sugar (or brown sugar alternative)
- dash of salt
- 1/4 cup pecan bits
- 2 cups rolled oats
- 1/4 cup brown sugar or brown sugar alternative, unpacked
- 2 tsp ground cinnamon
- 1 tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp baking soda
- Dash of salt
- 1 1/2 cups milk or your preferred milk alternative
- 1 cup pumpkin puree
- 1 mashed banana
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Melt oil over medium heat and mix in brown sugar and a dash of salt. Stir in pecans until they’re well coated. Then, set aside.
- Preheat oven to 350° F (175° C). And grease an 8” x 8” baking dish.
- In a mixing bowl, combine all dry ingredients until well mixed.
- In another bowl, combine the milk, pumpkin puree, banana, eggs, and vanilla and mix well.
- Stir wet ingredients into the dry ingredients until well combined.
- Pour the mixture into the prepared dish. Top with sugared pecans. And bake for 30 – 35 minutes, until set and golden.
- And serve warm immediately. Or cool completely before slicing into individual servings to store in the fridge for up to 4 days.
